This has been a roller coaster week. My numbers have still been high so they increased my medication to a full 500mg of Metformin.
All in all I have been getting more upbeat about the situation I have found myself in. I have joined a gym and also joined Weight Watchers so I can get a little help keeping an eye on my food intake and that way I am able to monitor my weight and what foods may or may not have an effect on my blood sugar.
I have been digging through my diabetic cookbook and have found some really interesting recipes. This is my favorite one so far, hope you enjoy.
Chicken Thigh Parmesan
| 1/4 cup reduced-fat grated Parmesan | Nonstick Cooking Spray | |
| 1/4 tsp dry Italian seasoning | 3/4 lbs lean boneless chicken thighs (should be 4) | |
| 1/4 tsp ground black pepper |
Combine Cheese, Italian seasoning, and pepper in a small dish. Place cheese mixture on a plate and coat each thigh. Spray a large skillet with the nonstick cooking spray and heat over medium-high heat. Add thighs and cook until no longer pink in the middle. Keep warm until serving.

This is adapted from the book, The Ultimate Diabetes Meal Planner. I use chicken thighs instead of Turkey Breast but the numbers do not appear to change. I really enjoyed this and it made for a great eat.
