This has been a roller coaster week.  My numbers have still been high so they increased my medication to a full 500mg of Metformin.

All in all I have been getting more upbeat about the situation I have found myself in.  I have joined a gym and also joined Weight Watchers so I can get a little help keeping an eye on my food intake and that way I am able to monitor my weight and what foods may or may not have an effect on my blood sugar.

I have been digging through my diabetic cookbook and have found some really interesting recipes.  This is my favorite one so far, hope you enjoy.

Chicken Thigh Parmesan


1/4 cup reduced-fat grated Parmesan Nonstick Cooking Spray
1/4 tsp dry Italian seasoning 3/4 lbs lean boneless chicken thighs (should be 4)
1/4 tsp ground black pepper

Combine Cheese, Italian seasoning, and pepper in a small dish. Place cheese mixture on a plate and coat each thigh. Spray a large skillet with the nonstick cooking spray and heat over medium-high heat. Add thighs and cook until no longer pink in the middle. Keep warm until serving.

The serving size is 1 thigh

This is adapted from the book, The Ultimate Diabetes Meal Planner.  I use chicken thighs instead of Turkey Breast but the numbers do not appear to change.  I really enjoyed this and it made for a great eat.

I was preparing for a surgery on my leg to remove a displaced screw.  I was also dealing with an infection in my leg that was causing a lot of pain.  I was on my antibiotics, and taking them regularly, and was afraid that with the infection the surgery would have to be put off.

I spoke with my doctor and because of the infection he wanted to do a fast blood screen and I needed to do a blood test before the surgery anyway.

I went to the lab, the took my blood, and I walked away confident in the fact that I would be healthy and everything would be fine.

As the lab results started to comeback to me, my confidence level raised steadily as everything was in great condition.  My cholesterol was very low, my blood pressure was great, so I was sure that on the 24th I would be able to proceed with my surgery.  I went to bed happy and content.

Dateline: January 23rd, 2014...the day that changed my life forever.

I woke up and went to my laptop to check my mail.  More tests have come in so I logged on and started going through the numerous tests that came back.  I finally made it to my glucose reading.

I panicked, obviously.  I was always afraid of getting Diabetes, it runs in my family.  My paternal grandfather lost a leg and died due to complications, my father also passed away due to complications caused by Diabetes.  As I looked through my messages my fears were confirmed as my doctor said that definitely I am Diabetic.

My world crashed around me.  I know people who live with Diabetes and even some people who were able to reverse it, but I also knew my family history and all I could think of is that I got handed a death sentence.  I laid in bed that day, deeply depressed and crying.

My work had already had me scheduled out for my surgery and had gone out of there way to make it happen as I was a new employee.  I let them know what was going on and they gave me a few days cope with everything and were absolutely amazing in the process.

I got my medication, learned how to use a glucose reader, and went back home to crawl into my hole in bed...it was my safe spot...nothing could happen to me there.

Over the next few days I changed my focus.  I had to go shopping and with my mom's help and support we went through our pantry and took out all the crap that I couldn't have.  I started researching what I needed to focus on and bought some cookbooks and books focused on Diabetes.

I decided to start this blog to tell everyone of my journey.  As I lose weight, as my medication changes, as my life changes.

You will find diabetic recipes that I have tested and enjoy.

Hopefully, if you are like me; newly diagnosed and upset, you may even find support.
